Moonstration Meal: Yarrow Vinaigrette w/ Spinach and Sprouted Lentils
Did you all check out the full moon last night?
As usual it was a lovely sight to behold and a nice opportunity to indulge in some self care.
I've been devoting a lot of time lately towards prayer and mxnifestation regarding my New Years Resolutions.
I've been going through a series of psychic attacks for the past few days so it was nice to have some down time under the protective moon light..
Oddly enough, I woke up this morning with my moon* and was pretty inspired to make a creative dish for my fully raw brunch. I turned to yarrow tea to assist my mild cramps and also took the time to make a yummy vinaigrette..
Yarrow Vinaigrette:
*Yarrow is not recommended if you are pregnant*
2 cloves of garlic, finely minced
1/2 tsp of black pepper
1/2 tsp of sea salt
1 tbsp of dried yarrow leaves, minced finely (if raw) or lightly sautéed
12 tbsp of oil
2 tbsp of vinegar
Place garlic, yarrow, black pepper, sea salt and vinegar in a bowl and mix together
Slowly pour in the oil (a little at a time); stopping to whisk the contents until you get a frothy/creamy consistency

Top it on a salad of your choice! I had just finished sprouting lentils so I threw the sprouts on top of some spinach leaves.
It was extremely delicious and very soothing with a cup of hot tea.
